Use at least a diamond sword with Sharpness V and Sweeping Edge III so evokers die in one hit, or you get vexes. A strength 2 beacon fixes it if the sword alone does not, and never put fire aspect on it because that breaks the armor stand.
You do not need a stack of each ominous bottle to seed the sorter. One of each level is enough and the farm fills the rest itself.
Check that every villager pod matches: same pistons, same fletching tables, observers facing the right way, and no nitwits among the villagers.
If the piston the mobs fall through looks broken after you rejoin or the chunks unload, flip the lever off and back on.
